Another week gone by...
Not much happened this last week. It was so normal and mundane that I didn't even get downstairs to update the blog. I have spent a lot of time holding Matthew because, 1) he cut another tooth, and 2) he got shots on Friday. So he really was a Mama's boy. I did make some caramels for mom for Mother's Day. Surprise!!! Well, I made two batches because the first batch cooked way too long and I ended up with a granite like slab, (maybe I could have used that to dip on instead of the slab I already have), so I made another batch. I watched this one more closely and realized that my candy thermometer was all wrong. The actual soft ball stage, which should be 235ish degrees, was reading around 215. That extra 20 degrees can make all the difference. So, I made them all by myself, cut them out today, and then either tomorrow or Wednesday I'll dip them. Hopefully the weather will cooperate. Then I'll ship them off. So Mom, if you read this I guess you know what you're getting for Mother's Day, and it will be early! You know I never really had to plan these gift giving holidays out before. But, I'm glad and grateful you are serving your mission.

Ok, so I just read this entry...so...when are you going to send us all caramels? :) Just kidding. I had some of the caramel that Kate made, and it is yummy. And I'm just thinking back to Christmas when we got a box of chocolates, which by the way, was the best thing ever. So I'm just wistfully thinking back to the good old days :) Well, have fun making your candies and know that we all appreciate them. You really are talented; I just wish you would have discovered this talent when you were still living at home! ;)

I was wondering when people were going to catch on to the fact that I told mom what I was getting her for Mother's Day! Well, I got her other things also, but I now feel sympathy for all of you guys who have had to mail mom her presents. I never really had to plan far ahead in advance, and I did not have to spend money on shipping. I guess mom being overseas and not at an APO or FPO is making up for all those years that I did not have to worry.
So anyways, about the memories...I did used to bake cakes just about every night. And if we were out of ice cream, do you remember when dad would run to Broulim's to go get some. Every night!! Crazy. Whenever Chad and I go to Tasty Treat to get ice cream, we always get juniors or smalls. He will look at the large, and say, no way, and I just say, that would be easy. I was practically raised on ice cream. Maybe that is why I am now doing LA. And I don't bake cakes every night for my family, tho I will be baking bread tomorrow. Yummy.
